Days 1–3: Istanbul
Day 1 — the icons: Hagia Sophia, the Blue Mosque, the Hippodrome and the Basilica Cistern, finishing with sunset from a Sultanahmet rooftop. Day 2 — palaces and bazaars: Topkapı Palace in the morning (see our palaces guide), then the Grand Bazaar and Spice Bazaar, with the tile-lined Rüstem Paşa Mosque in between. Days 4–5: Cappadocia
Fly to Kayseri or Nevşehir (about 1 hr 20 min) and check into a cave hotel in Göreme or Ürgüp. Day 4: Göreme Open-Air Museum’s rock churches, Paşabağı and Devrent valleys, sunset at Red Valley. Day 5: the dawn hot-air balloon flight, then the Derinkuyu underground city and a hike through Ihlara or Pigeon Valley. Evening flight (or next morning) to İzmir.

Day 6: Ephesus & Şirince
From İzmir or Kuşadası, spend the morning walking the marble streets of Ephesus — the Library of Celsus, the Great Theatre, the Terrace Houses — plus the House of the Virgin Mary on the hill above. Wind down over a long lunch and wine tasting in the hillside village of Şirince.
Day 7: Pamukkale
